Cranberry-Oat Cereal Bars

Ingredients

  • Nonstick cooking spray
  • 4 tablespoons unsalted butter
  • 1 bag (10 ounces) marshmallows
  • 1/2 teaspoon salt
  • 6 cups toasted oat cereal
  • 1 cup dried cranberries, or raisins

Cook's Note

Store in an airtight container up to 2 days.

Directions

  1. Step 1

    Spray a 10-by-15-inch rimmed baking sheet with cooking spray. Line with waxed paper; spray paper with cooking spray, and set aside.

  2. Step 2

    In a large saucepan, melt butter over medium heat. Add marshmallows and salt; cook, stirring occasionally, until marshmallows have melted, about 5 minutes. Remove from heat, and stir in cereal and dried cranberries.

  3. Step 3

    Immediately transfer mixture to prepared baking sheet. Using a spatula (or your fingers) coated with cooking spray, press in quickly and firmly. Let cool, about 1 hour; cut into 24 bars (3 rows lengthwise by 8 rows crosswise).

    Hi - I just analyzed the recipe at calorie count on about (dot) com. Per 24 bars - 101 calories, 2.5 grams fat, 127 mg sodium, carbs 19.6, sugar 9.4 g, protein 1.1 g. Their analyzer gives this an A- grade , excellent for an after school snack. I used Cheerios and Craisins for the analysis. Their recipe analyzer is free for anyone to use.

    These look good. I'd use malt/gluten-free oat cereal, and add some chopped walnuts or sliced almonds to the mixture.
    I make a similar treat with Gluten-Free Rice Chex.

    Ok, guys, short answers: 1) no, there's no substitute for marshmallows, or something equally bad, in a no-bake bar. There are nice granola recipes with peanut butter, sunflower butter, honey, etc., but they need to be baked. 2) honey-nut cheerios will be too sweet and not dry enough. 3) chocolate chips will melt and make a mess. dip one end of the fully cooled bars if you must have chocolate. 4) and finally, if you're worried about calories, don't eat anything with marshmallows in it.

    I have to agree that it is very important for nutritional values to be included. Most often i won't make a recipe if it doesn't include nutritional information, including sugar grams. So many recipes will include some info, but leave out sugar grams. MMO

    I agree too, it would be so helpful if the nutritional values are posted with your great recipes. For myself and all those that are concerned with their health and weight.

    Oh no, now we are going to get a slew of comments against adding nutritional values, telling us not to be so lazy and figure it out for ourselves. --It would be nice to at least have the calories included. ( andI don't have time to figure it out for myself.)

    I agree, Martha. Great recipes but nutritional values are so important especially for us trying to watch our weight not to mention those with health issues.

    I think I'll try putting a little cinnamon into the marshmallow/butter mixture. And add some chopped walnuts with the cranberries and cereal.

    I added some orange zest to the butter as it was melting and it added this great "je ne sais quoi" and my family and neighbors LOVE em!

    I thought these were yummy. I would use a 13 x 9 pan next time so the bars are thicker and not so "floppy". I also think I'll add some toasted, slivered almonds and chocolate chips next time.

    You could try substituting peanut butter for some of the marshmallows to get more protein in them. Don't use too much though or it probably won't come together and hold it's shape, and probably don't melt the peanut butter, just stir into the already melted marshmallows and butter.

    Excitedly, I made these yesterday. I love Rice Krispie treats and thought these would be a wonderful variation. The taste was good, but they never set. Even after cutting them, hours later, they oozed on the plate. Maybe a bit more cereal would have bound them together better.

    these are yummy. not sure they made as many as the recipe said. i ate a lot of them before i even took them out of the pan :)
