Caramel Pear Slices

Use this recipe with Golden Pear Cream Puffs. You can make the pears up to two hours ahead. Set aside in skillet, then warm over medium heat when ready to serve; stir in about two tablespoons water, if needed, to loosen the syrup.

  • yield: Makes about 3 1/2 cups

Ingredients

  • 1/4 cup (1/2 stick) unsalted butter
  • 3 Bosc pears, peeled, quartered, cored, and cut lengthwise into 1/4-inch slices
  • 1/2 cup sugar
  • 1 teaspoon fresh lemon juice

Directions

  1. Step 1

    Melt butter in a large skillet over medium heat. Add pears, and toss to coat with butter. Sprinkle sugar over pears. Cook, stirring pears occasionally, until deep golden, about 30 minutes.

  2. Step 2

    Add lemon juice and 1/4 cup water. Cook, stirring occasionally, until liquid is syrupy, about 3 minutes. Serve warm.
