Frosting Carrot Cake
John Barricelli of Everyday Food frosts Carrot Cake with Martha.
Place butter in bowl of an electric mixer fitted with the paddle attachment, and beat on medium-high speed until fluffy, about 2 minutes. Add cream cheese, and beat until well combined and fluffy, about 2 minutes more. Add sugar, orange zest, ginger, and salt, and beat for 5 minutes.
It was delicious but I might add some vanilla next time

made the cake for my sisters wedding and made an extra little cake to test , it was delicious. The frosting, I made today and it has a very soupy consistency even after adding 3 more cups of confec sugar and since I had 1 and 1/2 the recipe I now have way too much soupy frosting. So I checked other recipes for Cr Ch FRosting and the prportions are very different 8oz COLD cr ch,! stick butter ,! tsp vanilla with 4 CUPS confec sugar. is there a typo in John Barricellis recipe ???
Lili13: The cake recipe specifically adds the ginger in the second or third step...the frosting also adds ginger. It goes in both.
The video shows the ginger being added to the cake batter, but I noticed the frosting recipe is the one that calls for the ginger not the cake, I am confused please help someone. thanks
Are you supposed to add the ginger to the cake batter or the frosting, or both?

It was sooooooo yummy. The combination of John Barricelli's carrot cake and this frosting is out of this world! According to local consensus, I'll add more orange zest next time.
Incredible frosting. The freshly grated ginger adds a special quality to carrot cake and makes it taste beautiful!
