Tomato, Corn, and Avocado Salad

Ingredients

  • 1 ear corn (husk and silk removed; tip cut off)
  • 2 pints cherry, grape, or pear tomatoes, halved (or quartered if large)
  • 1 avocado, halved, pitted, peeled, and diced
  • 2 scallions, thinly sliced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon vegetable oil, such as safflower
  • Coarse salt and ground pepper

Directions

  1. Stand ear in a large wide bowl; with a sharp knife, carefully slice downward to release the kernels. Discard cob. Add tomatoes, avocado, scallions, lime juice, and oil to bowl. Season with salt and pepper, and toss gently to combine.

    My husband & I love this salad, it is a salute to Summer! Also as a Personal Chef, my clients love this dish & request it throughout the Summer. I add a couple dashes of toasted cumin seed that I grind in a coffee grinder that is just for spices.

    This salad is wonderful. Instead of the scallions in the summer, I add minced Vidilia Onion and no oil, just the lime juice. Summer tomatoes make this special.

    This is such a fantasticly refreshing salad. Easy to make, too! My husband and I finished the entire bowl. We had burgers and this salad, period. I would double for four people.

    This is so easy and tasty! It even tastes better the next day. I was worried about the avocados turning brown but because of the lime juice, they stay nice and green. Enjoy!

    I recently made this salad for my bookclub and it was hit!! Wonderful summer flavors that can be eaten by itself, or add tortilla chips and treat as a chunky dip. Enjoy!

    This is a wonderful dish... comes together in a flash and the fresh, late-summer corn and tomatoes are so sweet and flavorful. The bright lime dressing is perfect! I'll make this again and again.

    i'm about to make this salad for TODAY lol! and i'm nervous about the raw corn, but it looks from the comments, that everyone used raw corn, right off the cob? needless to say, i've never done this so i'm a little nervous. any additional tips?

    So fresh and the raw corn is really perfect. This is my new favorite salad. It is different and a perfect combination of ingredients. A seasonal delight!!

    CORN IS DELICOUS RAW RIGHT OFF THE COB. I OFTEN USE IT IN MY SALADS. IT IS WONDERFUL WITH BLACK BEANS, TOMATO, AVOCADOS, SPRING ONIONS AND LIME JUICE MIXED WITH MEXICAN SPICES AND OLIVE OIL.

    just another note..i did NOT cook corn, i thought the raw fresh corn made this. It added the fresh crunch that made me love this salad!

    this was very easy and a great bbq side. The fresh corn made all the difference. It doesn't make a ton, so next time I'll probably double it. Also, I like very ripe avocados, i always wait and add right before I serve and give the salad a toss so the avocado doesn't become a mushy mess

    This was a yummy recipe! I agree with the jalepeno for a little kick. I also think it works a bit better when you let everything but the avacado marinate for at least 30 minutes in the fridge. When you're ready to serve it, cut up the avacado and add it to the bowl. Mix until the avacado is coated in the juices.

    I think the intention of the recipe was to use the corn raw. Really fresh corn is sweet and wonderful raw. As soon as I can find a nice avocado, I'll be making this yummy-sounding salad!

    The recipe fails to say cook the corn first, which seems obvious. I found this corn salad very delicious. I got compliments for a summer party I threw. I prepped everything in advance except for the avocado, and then threw it all together at the end. The avocado does not turn brown due to the lime juice. I think it would also be good with a tasty heritage tomato diced. Thumbs up. Very easy.
