Cold Soba-Noodle Salad with Chicken, Peppers, and Cucumber

Can't stand the heat? Let someone else roast the chicken, then combine it with quick-cooking noodles, raw veggies, and a stir-together sauce.

Ingredients

  • Coarse salt and ground pepper
  • 8 ounces soba (Japanese buckwheat noodles)
  • 2 tablespoons vegetable oil, such as safflower
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons fresh lime juice, plus lime wedges, for serving
  • 2 tablespoons rice vinegar
  • 2 bell peppers (ribs and seeds removed), thinly sliced
  • 1 cup torn fresh basil leaves
  • 1 English cucumber, peeled, halved lengthwise, seeded, and thinly sliced
  • 1 rotisserie chicken, skin and bones removed, meat shredded (about 4 cups)

Cook's Note

Most supermarkets carry soba noodles in the international foods aisle, but if you cant find them, substitute whole-wheat spaghetti.

Directions

  1. Step 1

    In a large pot of boiling salted water, cook noodles until al dente; drain, and rinse with cold water. Set aside.

  2. Step 2

    In a large bowl, whisk together oils, lime juice, and vinegar; season dressing with salt and pepper to taste.

  3. Step 3

    Add bell peppers, basil, cucumber, chicken, and noodles to bowl; toss with dressing. Serve noodle salad with lime wedges.

    Also--to get the noodles to blend well with the other ingredients: break them in half before cooking.

    This is a FANTASTIC dish, I make it often. Healthy and cheap. I also make a whole broiler or roaster in the crock pot in lieu of a rotisserie chicken.

    I made this for the 28 day challenge today to have for lunch this week. It's great although it needed more seasoning for my taste. I have a garlic pepper grinder at work and it was just what it needed.

    We make this all the time, it is so healthy and delicious! I have used quinoa in place of the noodles, and once, in a pinch, I had to use lemon juice instead of lime. Definitely a different flavor, but still very good. And white wine vinegar makes a perfect stand in for rice vinegar.

    I absolutely love this salad, but with a couple variations. Not wild about soba noodles so I use whole grain spaghetti, use all sesame oil instead of part vegetable, and double the dressing. Be sure not to overcook the noodles and the leftovers will be just as good the next day!

    Munching on this right now and it's so delicious. Now I know it will be good for lunches.

    I only used 1/2 a package of soba noodles and have a large bowl. Use your other half on EDF's Soba Soup with Spinach.
