Roast Beef Sandwich with Cukes and Pickles

Ingredients

  • 2 kaiser rolls, split
  • 1/4 cup light mayonnaise
  • 1 Kirby cucumber, thinly sliced
  • 6 ounces thinly sliced deli roast beef
  • 1/3 cup bread-and-butter pickle chips, drained and patted dry

Directions

  1. Dividing evenly, spread cut sides of rolls with mayonnaise. Layer bottom halves with cucumber, roast beef, and pickle chips; close sandwiches, and serve.

Cook's Note

To store, wrap in waxed paper or plastic, and refrigerate, up to 1 day.
