I did this over the top of a Harry and Davids chocolate cheesecake and it was wonderful. It was too much ganache for the size of the cake, but who cares if it dripped down the sides and onto the plate. It looked great and made a good cake fantastic.

I felt the ratios were wrong on this ganache recipe. next time, I will use 1/2 cup cream for 4 oz chocolate. The chocolate firmed up too much and cracked as I cut the chilled cake.

chocolate wafers are hard to find so i always just use chocolate graham crackers. this recipe is definitely a family favorite!

Easy to make, sometimes I'll throw in some walnuts or pistachios. I slather this all over the easy chocolate cupcakes and sometimes some strawberries.
