Preheat oven to 450 degrees, with rack in upper third. In a food processor, pulse bread and 1 tablespoon oil until large crumbs form; season with salt and pepper. Set aside.
In a large saucepan, heat remaining 2 tablespoons oil over medium. Whisk in flour; cook, stirring constantly, 1 minute. Gradually whisk in milk. Bring to a boil; add broccoli. Reduce to a simmer. Cook, stirring occasionally, until broccoli is tender, 15 to 20 minutes. Remove from heat; stir in 3/4 cup cheese.
Transfer mixture to a shallow 1 1/2 quart baking dish; top with breadcrumbs and remaining cheese. Bake until breadcrumbs are golden, 6 to 8 minutes. Let rest 5 minutes before serving.
So much easier to cook the broccoli and sauce in one pan. I put the bread crumbs right on top of the mixture in the pan so the whole thing goes into the oven. Only one dish to wash.
My husband and I loved it, it was so light and easy.
My son loves this. I add a bit more cheese than the recipe calls for and I also add ,some salt to taste as I found this to be a little on the bland side.
I just made this for our Sunday dinner. It was so easy and delicious! I used 2 cups of 1% and 1 cup of whole milk. I also seasoned the milk with salt and pepper before tossing in the broccoli. Oh yeah and whole wheat bread for the crumbs instead of white. Will definitely make again and again!
