Creamy Pasta Salad with Celery

Celery and onions are a refreshing addition to this creamy pasta salad.

Ingredients

  • 1 pound medium pasta shells
  • Coarse salt and ground pepper
  • 1 cup light mayonnaise
  • 1/3 cup fresh lemon juice
  • 6 celery stalks, halved lengthwise and thinly sliced crosswise, plus 1 cup celery leaves
  • 1/2 medium red onion, finely chopped

Directions

  1. Cook pasta in a large pot of boiling salted water until al dente; drain and rinse under cold water to stop cooking. Set aside.
  2. In a large bowl, whisk together mayonnaise and lemon juice. Add celery stalks and leaves, onion, and cooled pasta; season with salt and pepper. Toss to combine.

    Try adding green onion, diced piemento peppers ( small jar), dill weed (1 teaspoon), sweet relish ( 1/4 cup), and 2 tablespoons sugar. These ingredience add contrast of sweet and tart. And the dill weed adds another layer of flavor.

    So simple, quick and really delicious. We made it with the pasta that translates to "little ear" and it waa wonderful. Five days later my husband was asking me to make it again. Definately a keeper among my recipes.

    Very easy and refreshing pasta salad. Brought it to a picnic and was gone in minutes. Did add extra lemon juice.
