Caramelized Green Beans with Pine Nuts

Give sauteed green beans a buttery crunch with pine nuts.

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 1/2 pounds green beans, stem ends removed
  • 2 tablespoons pine nuts
  • Coarse salt and ground pepper

Directions

  1. In a large skillet, heat butter and oil over medium-low. Add green beans; partially cover, and cook, tossing occasionally, until green beans are tender and browned in spots, 30 minutes. Add pine nuts; cook until nuts are toasted, 5 minutes. Season with salt and pepper.

Cook's Notes

It can take a lot of time to cut off the stem ends of green beans one by one. Instead, gather a small bunch, and remove several ends at once.

    I think I had the heat too high as my green beans got way more than "browned in spots". They were still tasty though next time I will turn the heat lower. Also didn't have pine nuts on hand and substituted sliced almonds.

    a simple and delicious recipe!!!! i used sliced almonds instead of pine nuts adding them after thirty minutes, they toasted nicely in about 5 min. this was a nice side dish for the baked haddock we had for dinner. i will definitely make this again.also used a stainless steel skillet which i think helped caramelize the beans

    From what I remember of the show your suppose to toast the pine nuts before then add the oil and butter and cook the beans.
