Chocolate Chunk Cookie Cupcakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light-brown sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/3 cup whole milk
  • 8 ounces semisweet chocolate, cut into 1/2-inch chunks

Directions

  1. Step 1

    Preheat oven to 375 degrees. Line 2 standard 12-cup muffin tins with paper liners; set aside. Whisk together flour, baking powder, and salt in a medium bowl; set aside.

  2. Step 2

    Put butter and sugars into the bowl of an electric mixer fitted with the paddle attachment, and mix on medium-high speed until pale and fluffy. Mix in eggs, 1 at a time, and vanilla. Reduce speed to low. Add flour mixture in 2 batches, alternating with the milk. Stir in chocolate chunks with a rubber spatula.

  3. Step 3

    Spoon 1/4 cup batter into each muffin cup. Bake until pale golden and a cake tester inserted into centers comes out clean, about 20 minutes. Transfer cupcakes to wire racks; let cool completely.

    Very yummy and quick! I halved the recipe and it made about 8 cupcakes, there was not a lot of batter. Since there are 3 eggs and I halved it, I put in 1 large egg and 2 tablespoons more milk. I cut the sugar a little and the butter by 2 tablespoons, great results. I cut up my chocolate easter bunny to put in the cupcakes, great use of it! I did not take the advice and just greased my tins, bad idea! Use paper liners. Overall, great cupcake, very light and fluffy.

    just made these and they came out great!! i filled the cups a little higher than normal which made them come out nice and round at the top, but they also needed to be baked for an extra 5 minutes. my whole family loved them and my brother said "8 out of 10." best when eaten while they're still warm:)

    These ended up amazing! just remember to fill in the cups more than normal cupcakes because these don't rise.

    These are excellent, they taste just like the name says, a chocolate chunk cookie that turned into a cupcake. The chunks are key here for big pockets of chocolate deliciousness :-)

    I've already commented on these cupcakes and I still find them one of the best and easiest recipes I've EVER found. I agree with 'waniebesh' and saving some chips to put on top works very well. I only bake 1 pan at a time to avoid burning them. I recommend this recipe to everyone!

    Just finished baking these cupcakes and they are awesome! Very easy to make, they taste fantastic and look good...Mine look just like the picture above...My way of doing it - mix most of the chocolate chunks in the batter but leave a few to put on top of the scooped batter just before putting them in the oven...try it...recommended to all!

    I've baked these cupcakes about 4 times now, and I've had mixed results. Here's what I've noticed: The butter must be softened, but not melted. When melted, the batter is too thin, and the chocolate chips sink to the bottom. Microwave the butter in 10 second intervals until soft. Also, remember to rotate the pans at least once while baking, to ensure even baking. If you have to, take them out a 30 seconds early, rather than burn them! Hope this helps!

    I made these cookie cupcakes, and was not happy with the results. I may have overbaked them, however, I tested them with a toothpick and took them out when the pick was clean. I won't be making them again.

    these taste better the next day once the dough has had time to settle and harden a bit. tastes like a bar in a cupcake form. mine doesn't quite look like the picture, but still tasted good. i added peanut butter chips, pecans

    They taste fanstastic! My 3 yr old loves it. I used semi-sweet choc chips instead of chopping chunks which I find easier to use. Will definately use this recipe more often from now.

    My daughter made these for a second grade school project that she had to do by herself to sell at their n n n n n n market day.n n n n n n On her advertisement poster, her caption was n n n n n n the best cookie meets a cupcake.n n n n n n They were a huge hit. The aluminum cupcake liners worked better than the paper ones, and we were also able to bake more at once with the aluminum liners on a cookie sheet rather than in a muffin tin. We also used semi-sweet chocolate chunks rather than chopping our own chocolate. Thanks for a great recipe.

    These are so easy and delicious. I get requests for them anytime there is a bakesale or party. I just can't seem to keep the chocolate from sinking to the bottom of the cupcakes. I even coat them with flour first. But that does not affect the taste!
