Spicy-Sweet Chicken Wings

These wings have a citrus flavor that's slightly sweet with some heat.

Ingredients

FOR THE WINGS

  • 2/3 cup hoisin sauce
  • 2 tablespoons finely grated orange zest
  • 1/4 to 1/2 cup Sriracha hot-chile sauce, or other hot sauce
  • 1/4 cup honey
  • 1 teaspoon toasted-sesame oil
  • 4 1/2 pounds chicken wing drumettes, patted dry with paper towels (35 to 45 wings)

FOR THE DIPPING SAUCE

  • 2 teaspoons safflower oil
  • 3 garlic cloves, minced
  • 1/2 cup fresh orange juice (from about 2 oranges)
  • 2 tablespoons honey
  • 2 teaspoons hoisin sauce
  • 1/4 teaspoon salt
  • Sliced scallions, for garnish

Directions

  1. Make the wings: Whisk hoisin, orange zest, hot sauce, honey, and sesame oil in a large bowl. Refrigerate 1/2 cup marinade. Add wings to remaining marinade, and toss to coat. Cover, and refrigerate, tossing wings occasionally, for at least 2 hours (or overnight).

  2. Preheat oven to 375 degrees. Let wings stand at room temperature for 30 minutes. Arrange on a rimmed baking sheet, and bake for 20 minutes, rotating sheet and brushing with half of reserved marinade halfway through. Increase oven temperature to 425 degrees. Bake wings, brushing with remaining marinade, until golden brown, about 20 minutes more.

  3. Make the dipping sauce: Heat safflower oil and garlic in a small saucepan over medium heat for 30 seconds. Add orange juice, honey, hoisin, and salt, and cook for 2 minutes. Let cool.

  4. Arrange wings on platter, sprinkle with scallions, and serve with sauce.

    I did not care for these at all. I thought the sweet and spicy both were too subtle. The spice level was ok, but the spice flavor wasn't very interesting. The wings didn't get at all crispy--not sure if they were supposed to or not, but either way the skin was just flabby and soggy. My husband thought they weren't bad (not exactly great but ok) and he's the bigger chicken wing fan, so it's a mixed review from me!

    The recipe was really easy to make. I made if for game today and everyone liked them. But the 1/4 cup of siracha hot sauce just wasn't enough, so if you like spicy, add 1/2 cup. And i would cook the wings at 450 degrees for the last 20 minutes instead. It'll make them crispier! Enjoy!

    very tasty! the tip to spread the wings between two trays was very helpful, the wings got nice and crispy!

    I didn't think this was spicy, but 2 of my guests did. In any case, it was a hit, and perfect to leave out for the guys watching a sports game. I will definitely make again. I used regular drumsticks instead of wings.

    I made this and found that it wasn't too spicy, but I like a lot of spice, so that may not apply to everyone. However, I found that it was kind of bland otherwise, and was a little dissapointed with overall flavor. I wouldn't make again, probably.

    I made these last night and was a bit disapointed w/ them. The other reviews here were such raves that I was sure that they would be amazing. These came out good but no more and no less.

    Great recipe. Have always been a fan of orange chicken. Agree that sauce is not needed. They are spicy. There is a definite orange taste. Now my favorite wings.

    I made these for Super Bowl and they were delicicious. We marinated for a full 24 hours and followed the baking time to a tee. We didn't use the sauce because there was no need for it. The wings stood on their own. The only thing I would do differently is add less orange zest. I felt it was a bit too citrusy.

    We made these for Superbowl and they came out GREAT! Both the wings and the sauce (I did simmer it for 10 mins, not 2) Not too hot at all, but we all have different palates.... Also, I watched the wings carefully. There was a point where they went from barely done to almost overcooked very quickly. Try them again.... I will.
