Citrus Sorbet

Frosty sorbets are served in lemon peels for a light and refreshing accompaniment to the wedding cake. Cut lemons in half and scoop out the flesh. Pack the peels with your favorite sorbet and freeze until set, about 1 hour. Slice into wedges just before serving.

As a prelude to the wedding cake, give each guest a miniature version molded from sorbet, a palate cleanser. For a sweet decoration, the bride's and groom's initials are piped in chocolate along the edge of each plate, and the sorbet "cake" is garnished with raspberries.
