Black Beans with Lime

This side dish cooks up in just 10 minutes; a little chili powder gives the beans a spicy kick.

Black Beans with Lime

  • 1 tablespoon olive oil
  • 2 scallions, white and green parts separated, thinly sliced
  • Coarse salt and ground pepper
  • 2 cans (19 ounces each) black beans, rinsed and drained
  • 1 teaspoon chili powder
  • 1 tablespoon fresh lime juice


  1. In a medium saucepan, heat oil over medium. Add white part of scallions, and season with salt and pepper. Cook until softened, about 3 minutes.

  2. Add beans, chili powder, and 1/4 cup water. Cook until warmed through, about 5 minutes. Remove from heat, and stir in lime juice; season with salt and pepper. Serve garnished with green part of scallions.

    I found that Cumin was better than Chili powder, and I threw in some cilantro. Easy!

    This simple recipe is my favorite on the entire site. It's a staple in my house in the summer, you can add chicken to it, or cooked shrimp. Delicious!

    This is a great and easy side. The lime and green onions add just a little something extra that makes the beans better.

    An absolute favorite for me as a side dish with anything grilled. Really simple and easy to prepare using simple ingredients, but so delicious! Also great with some grilled shrimp tossed in. I top it off with low-fat sour cream.
