Stewed Green Beans with Bacon

  • 6 slices bacon, thinly sliced crosswise
  • 2 1/2 pounds green beans (stem ends removed), cut into 1-inch lengths
  • 1 can (14 1/2 ounces) reduced-sodium chicken broth
  • Coarse salt and ground pepper


  1. In a 5-quart Dutch oven or heavy pot, cook bacon over medium, until browned, 10 to 12 minutes.

  2. Add green beans, broth, and 2 cups water; season with salt and pepper. Bring to a boil; reduce to a simmer, and cook until green beans are very tender, about 1 hour. Season with salt and pepper.

    I agree with the other reviewers, I have never liked green beans, my whole life. I am constantly trying recipes, to find one that makes me like them, but it never happens. We tried this one, and wah-lah, I liked them. A great way to use up an overstock of green beans from the garden, and if you have leftovers, this recipe freezes really well.

    I have been trying to find a simple, tasty way to make green Beans that all of my family will like. I have steamed, boiled, cooked with a variety add -ons, casseroles, etc., but with mixed results. all of my kids loved these beans and devoured them, asking for more.
