Rocky Road Brownies

These chocolaty treats are topped with a chewy layer of marshmallows, nuts, and even more chocolate. The kids will hardly be able to wait until the brownies are cool!

Rocky Road Brownies

  • 1/2 cup (1 stick) unsalted butter, cut into pieces, plus more for pan
  • 1 bag (12 ounces) semisweet chocolate chips
  • 1/2 cup granulated sugar
  • 1/2 cup packed light-brown sugar
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup all-purpose flour, (spooned and leveled)
  • 1 cup miniature marshmallows
  • 1/2 cup chopped nuts, such as cashews, pecans, or walnuts


  1. Preheat oven to 350 degrees. Butter an 8-inch-square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter paper.

  2. In a heatproof bowl set over (not in) a saucepan of simmering water, combine butter and 1 cup chocolate chips. Heat, stirring occasionally, just until melted, 3 to 5 minutes.

  3. Remove mixture from heat; stir in sugars and salt, then eggs, and finally flour, stirring just until combined. Spread batter evenly in prepared pan. Bake until a toothpick inserted in center comes out with moist crumbs attached, 30 to 35 minutes.

  4. Remove from oven, and sprinkle with remaining chocolate chips, then marshmallows and nuts. Bake until chocolate is shiny and marshmallows are puffed, about 5 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 squares.

Cook's Note

To prevent toppings from sinking into the batter, sprinkle them on after brownies are baked. An extra 5 minutes in the oven melts the topping together for easy slicing.

    great tasting very easy recipe i microwaved the chocolate chips and butter, i did add organic extracts vanilla almond and a bit of coffee extract. the brownies turned out great!

    I use this decadent mixture to make amazing mini- brownie muffins. By pouring the batter in small muffin moulds, a lot of that crispy crust covers every bite. Yummm... and I also think popping these one-bite wonders in the toaster/microwave for a few seconds/minutes enhances the chocolaty goodness considerably.

    I'm giving the recipe a shot now I like the 8" pan (small family) and am used to a similar recipe

    I tried the suggestion of graham crackers instead of nuts and thought it was delicious. The only problem for me was that the graham crackers softened by the next day. The brownies themselves were good and easy but not out of this world.

    Nuts are pretty much a "no, no" with some members of my family. I substituted coarsely broken graham crackers for Smores Brownies!

    These brownies are delicious and so easy to make. I don't know why anyone would use a box mix when these are so simple and taste so much better! The brownie alone is a great base for many other toppings too. Yummy!

    I sometimes use a good box brownie mix instead of making them from scratch. I also add a handful of chocolate chips to the batter. When done, I add chocolate chips, mini marshmallows and walnuts on top. Pop into the oven until the marshmallows brown. Real gooey and decadent!

    These are really easy and wonderfully decadent. Couldn't find white mini marshmallows, so I just cut up the large ones and they turned out perfect. I also found the 16 serving too ambitious and whittled it down to 12.

    These brownies are SO delish! One tip - before serving them, pop them in the microwave for just a few seconds to melt the marshmallows. They get completely gooey and are heaven!

    These brownies are great, and so easy to make! I made it even simpler by melting the chocolate chips and butter in the microwave. YUMMY! Will definitely make these again!

    The recipe I'm used to do is pretty similar, except that we use chocolate squares instead of chocolate chips and vegetable oil instead of butter, and that chocolate is melted in the heating oven. This one looks a little longer to prepare, but is still an interesting alternative.
