Cranberry Sauce

 Every year, Martha's friend Jane Heller and her husband, Steve, divide up their Thanksgiving cooking: Jane makes her special black-lacquered turkey, while Steve makes the side dishes, including his signature cranberry sauce. This recipe uses orange juice as a flavorful cooking liquid to temper the tartness of the cranberries.

Steve's Cranberry Sauce

Makes about 3 cups

3 cups cranberries (one 12-ounce bag)

1 cup orange juice

1 cup sugar

Combine all ingredients in a heavy saucepan. Cook over medium heat, stirring constantly until cranberries soften and begin to pop, about 5 minutes. Remove from heat, let cool, and refrigerate.

    This sauce was a cinch to make and was so delicious with our Thanksgiving dinner. The following morning my young children gobbled it out of a bowl as cranberry jam and on top of their buttered bread for a yummy French tartine. A new staple at our house!
