There are several types of cucumbers: short; stout pickling; spiny slicing; long, thin Asian types; seedless; and novelty kinds, including egg-shaped, yellow, and white. Popular ones include English, Armenian, and Kirby.
In Season: Cucumbers peak in the summer.
What to Look For: Look for firm, unwaxed cucumbers without wrinkles or soft or slimy spots. Kirbys, a small type that's perfect for pickles, should be bright green, and no more than 6 inches long. Avoid cucumbers with withered ends; also avoid specimens that are very thick.
How to Store: Refrigerate unwashed and wrapped in a plastic bag up to 1 week.
