Edible Bird's Nest

Speckled jelly-bean eggs in a crispy phyllo nest are sweetly seasonal. Use kataifi, pre-shredded phyllo, which is sold frozen at Greek grocers and large supermarkets. Toss phyllo with melted butter and sugar or cinnamon-sugar, then assemble nest in a small muffin tin by gently pressing layers of phyllo into shape. Bake at 375 until nest is golden brown and crisp around the edges, 15 to 20 minutes. Once cool, top the nests with jelly beans.
