Quick-Cooked Corn

Rather than wait for a huge pot of water to boil, steam corn to perfection in just minutes. Bring two inches of water in a stockpot to a boil, then stand cobs with stem sides down in the pot or in a pasta insert. Cover, and steam until corn changes color, 6 to 8 minutes.
