Heating herbed olives before you serve them is an excellent way to bring out their flavor. One-half pound of kalamata, nicoise, or other olives will serve six people. Rinse and drain; place in a baking dish. Toss with a bit of olive oil and other ingredients, such as garlic and herbs. We paired ours with hot chile peppers and garlic cloves; bay leaves and fennel seeds; strips of lemon peel and thyme (orange peel and rosemary are another good combination). Heat in the oven, at 350 degrees, 15 to 25 minutes; serve warm.
