Exposure to sunlight can turn olive oil rancid. To protect its flavor, decant the oil into a dark-tinted bottle.

    Is it OK to keep olive oil IN the fridge? I do - and my oil DOES conceal in the bottle - but 15-20 minutes out on the countertop quickly returns it to liquid state. You just need to keep that in mind before you want to begin a recipe. Is fridge better than cool dark bottle? thanks.

    Exposing Olive Oil to heat turns it rancid quicker than light - keep in a cool cabinet, away from the stove and not above the refrigerator. (I work for an olive oil company)
