Long-Lasting Mushrooms

Plastic-wrapped cartons are fine for supermarket displays, but they should be tossed when you get home, as should plastic bags from the produce section. Instead, transfer loose mushrooms to a brown paper bag to block light and let air circulate, which will keep skins smooth and dry. The mushrooms will keep in the refrigerator for a week.
