Craving a bite of brownie, a mug of hot cocoa, or a spoonful of chocolate pudding? Be sure to stock this dark, intense ingredient.

Degrees of Darkness
Cocoa powder is made from cocoa beans that were pressed to remove most of the cocoa butter. Surprisingly, the lighter-colored natural variety is more chocolaty than the darker Dutch-process, which is milder in flavor. Each type reacts to leaveners differently, so the two are not interchangeable; Everyday Food recipes use Dutch-process cocoa.

Cooking with Cocoa
Use cocoa powder in baked goods (Fudgy Skillet Brownies), sweet drinks, and even chili. Some recipes call for both cocoa powder and chocolate, a combination that yields an especially deep flavor.
