Thawing in refrigerator is best; place turkey (still in wrapper), breast side up, on a rimmed baking sheet. Allow one day for every 4 pounds of turkey.
Handling Raw Turkey
When handling raw turkey, use a separate cutting board to avoid contaminating other ingredients. Wash board, utensils, and your hands with hot, soapy water immediately after coming into contact with the turkey. Before cooking, rinse the bird inside and out with cold water; pat dry with paper (not cloth) towels.
