Pressure Cooking

A pressure cooker lets you cook food quickly without the addition of much oil or fat: The cooker's airtight seal traps steam inside, so foods cook faster than they do with conventional methods. Here, we have adapted some of our favorite winter recipes for use with a pressure cooker.
