Pressure Cooking

A pressure cooker lets you cook food quickly without the addition of much oil or fat: The cooker's airtight seal traps steam inside, so foods cook faster than they do with conventional methods. Here, we have adapted some of our favorite winter recipes for use with a pressure cooker.

Three Bean Ribollita
Coq au Vin
Pork and Pinto Bean Chili
Veal Stew with Shallots and Wild Mushrooms

Any summer recipes? I want to 'bake' stuff but it's to hot! Grilling with 'gas' is just not the same as charcoal, and we only have a gas grill! So my thoughts have turned to my pressure cooker instead of oven usage.

I'm so happy to find pressure cooker recipes here. Especially slow-food classics, made faster! I have a whole website of pressure cooker recipes, please let me know how I may contribute!
