Broccoli

This emerald-green vegetable can be steamed, roasted, or blanched. Try it in soups, salads, and stir-fries.

When It's Available
Although broccoli can be found in grocery stores throughout the year, it is at its peak from October through April.

What to Look For
The heads should have tightly clustered florets that are deep green (often tinged with purple), with no yellow spots. The stalks should be firm, not rubbery, with crisp, unwilted leaves.

How to Store
Broccoli can be kept in the refrigerator for up to four days, depending on its freshness when purchased. Wash and trim just before using.

Nutritional Benefits
Like other cruciferous vegetables (such as kale and cauliflower), broccoli is an excellent source of vitamin C, beta-carotene, folic acid, and iron.
