When prep-kitchen manager John Barricelli and Martha shared a great dessert at a local restaurant, John was inspired to make this classic zuppa inglese cake for Martha’s mother’s birthday. Zuppa inglese means “English soup” in Italian, and in fact this sponge cake, layered with rich custard and whipped cream, is similar to the British favorite, trifle. It is often used as a wedding cake because it is white and has four layers.
