One-Pot Pasta

Everyday Food, October 2008

Fitting a sit-down supper into your family's busy schedule can be a challenge, but with this easy, cheesy pasta, it doesn't have to be. Boil penne 6 minutes less than al dente; add broccoli florets, and cook until penne is al dente. Drain; return to the pot, and toss with a couple of crushed garlic cloves, some olive oil, the zest and juice of a lemon, salt and pepper, and plenty of Parmesan. It's one meal that's sure to call the gang to the table in no time.

I've done this but added mashed chickpeas for a protein kick. You could also turn this into a carbonara

This dish was perfect for our family. No fuss, delicious, filling and cheap...what more could you want? I used one box of penne pasta, florets from a "bunch" of broccoli, half a lemon, 2 teaspoons (ish) garlic powder and 2 cups bagged shredded parmesan. Delish! Not a noodle left in the pot...

    6 TBSP Olive Oil
    5 Cloves garlic
    Salt and Pepper to taste
    1 pound Parm. cheese
1/2 a lemon (Juice and zest)**** When I did it, i used a whole lemon and it just seemed like way to much
