Drying Lavender

The simplest way to preserve lavender's fresh, soothing scent for use in sachets, wreaths, and potpourri is to hang the flowers from their stems to dry. Cut a number of fresh flower heads with stems 6 to 8 inches long, and clasp them so that the bases of the flower heads are even with one another. Make a bundle of stems approximately 3/4 inch in diameter, secure it near the flower heads with raffia twine, then crisscross the twine tightly down the stems. Make an even cut across the end of the stems for a neat appearance, and hang the bunches in a cool, dry place.
