Family Friendly: Baked Potato Bar

Sidle up to the table, split open a spud, and fill it with one of our four flavor combinations. Each topping combination below is enough for four potatoes. If you've got a crowd to feed, bake more potatoes, and make more than one style of topping.

Baked Potato Recipe

All-American Topping
1 cup shredded Monterey Jack cheese
4 ounces cooked ham, diced
1 cup frozen peas, thawed

Scandinavian Topping
1 cup reduced-fat sour cream
4 ounces smoked salmon, torn into small pieces
2 to 3 scallions, thinly sliced

Tex-Mex Topping
1 cup crumbled soft goat cheese
1 cup canned black beans, rinsed and drained
1/2 cup store-bought salsa

Italian Topping
1 cup part-skin ricotta cheese
4 ounces sliced pepperoni (1 cup)
1 package (10 ounces) frozen leaf spinach, thawed, squeezed dry, and roughly chopped

    ..another menu favorite was potato with butter, turkey gravy, couple slices deli turkey, more gravy and a side of cranberry sauce. Then there was the potato, chili, cheese and onions. Also just plain old butter, sour cream and chives. Also potato, brown gravy, sliced deli roast beef, more brown gravy. Top with sauteed mushrooms. We had something like 13 different potatos at the Potato Fatctory I managed with great pictures of each one to entice the hungry customer.

    I use to manage a restaraunt called the Potato Factory. We used HUGE Idaho potatoes, baked, loosen up the white part, drop in a cube of butter, pour on brown gravy, cooked hamburger meat, boiled bell peppers, more gravy, slice of cheese (melted) dollop of sour cream, and sprinkle of chives. a whole meal!     Chili con carne or soup on top is a filling meal. Or shredded chicken and your favorite salad dressing.

    Thank you for the ideas, KMOM14. We eat baked potatoes constantly and love to try new toppings. I already had potatoes in the oven before I saw this! I think we'll try some of your toppings tonight.

    Other topping that are are good are bacon, crushed up (or what is left towards the bottom of the bag) nacho, tortilla or potato chips, corn, hot melted cheese sauce/fondue, any kind of cheese shredded or in small pieces, bits of olive, bits of carrots, steak sauce, sweet and sour sauce, teryaki sauce, stir fry sauce, chow mein noodles and ranch dressing.
