Flavorful Infusions

Cooking with steam and cooking with herbs and other aromatics are two great ways to prepare food. Why not combine them? Together the methods impart light, fresh, and healthful flavors to poultry, vegetables, and fish. Fill a pot with about an inch of water, add the ingredients, and bring to a simmer. Then, steam your food over the pot. Any mix of aromatics will do; we like fresh dill and citrus peel for chicken, Kaffir lime leaves and chopped lemongrass for shellfish, mint leaves and lemon slices for fish, and the classic pairing of rosemary and crushed garlic for potatoes.
