Cornish hens are roasted with herbs and lemon, then served alongside panzanella, or bread salad; this one is made with green beans, onion, olives, fennel, and feta. This entire meal serves four and takes about an hour.

Easy Pea Ravioli with Mint
Cornish Hens with Lemon and Herbs
Mediterranean Panzanella
Honey Zabaglione with Grapefruit

1. Prepare and bake Cornish hens
2. Make the pea mixture; fill ravioli
3. Section grapefruits and make zabaglione; refrigerate
4. Blanch green beans; combine panzanella ingredients
5. Cook ravioli and finish panzanella
