Grilling Meat Tips

Heat grill to medium-high. For setting up direct- and indirect-cooking zones, see setting up the grill. Steak times are for medium-rare results.

Whole Fish, 1 1/2 to 2 pounds
Charcoal-grilling time: 10 to 12 minutes per side, direct heat
Gas-grilling time: 12 to 14 minutes per side, direct heat

Chicken Drumstick
Charcoal-grilling time: 5 minutes per side, direct heat, then 7 to 9 minutes per side, indirect heat, lid on
Gas-grilling time: 5 minutes per side, direct heat, then 10 minutes per side, indirect heat, lid on

Chicken Breast, Split, Bone-In
Charcoal-grilling time: 10 minutes, skin down, direct heat, then 8 to 10 minutes per side, indirect heat, lid on
Gas-grilling time: 10 minutes, skin down, direct heat, then 12 to 15 minutes per side, indirect heat, lid on

Chicken Thigh, Bone-In
Charcoal-grilling time: 10 minutes, skin down, direct heat, then 8 to 10 minutes per side, indirect heat, lid on
Gas-grilling time: 10 minutes, skin down, direct heat, then 10 to 12 minutes per side, indirect heat, lid on

Chicken Wing
Charcoal-grilling time: 15 minutes, direct heat, flipping occasionally
Gas-grilling time: 15 minutes, direct heat, flipping occasionally

Rib-Eye Steak, Bone-In, 1 Pound, 1 1/2 Inches Thick
Charcoal-grilling time: 6 to 7 minutes per side, direct heat
Gas-grilling time: 8 to 9 minutes per side, direct heat

Skirt Steak, 1 1/2 Pounds
Charcoal-grilling time: Thin end: 2 minutes per side, direct heat. Thick end: 4 minutes per side, direct heat
Gas-grilling time: Thin end: 2 minutes per side, direct heat. Thick end: 5 minutes per side, direct heat

Flank Steak, 2 Pounds
Charcoal-grilling time: 4 minutes per side, direct heat, then 3 minutes per side, indirect heat, lid on
Gas-grilling time: 7 minutes per side, direct heat, then 5 minutes per side, indirect heat, lid on

Hanger Steak, 1 1/4 Pounds, 1 1/2 Inches Thick
Charcoal-grilling time: 4 minutes per side, direct heat, then 6 minutes per side, indirect heat, lid on
Gas-grilling time: 7 minutes per side, direct heat, then 6 minutes per side, indirect heat, lid on

Pork chop, Bone-In, 1/2 pound, 1 Inch Thick
Charcoal-grilling time: 4 minutes per side, direct heat
