Using heated platters is an excellent way to help food retain its heat during serving, but it may be difficult to prepare these platters when your oven is full of food. Another easy way to take the chill out of materials such as pottery, china, and porcelain is to place them in a clean sink and run hot water over them. When your meal is ready to serve, remove the platters from the sink, dry them, and use them immediately. If your tap water isn't hot enough, you can heat water in a kettle and pour it over the platters. You can also use this handy trick with your coffee- and teacups; it will insulate hot beverages for a longer period of time.
