Chicken breasts smothered with onions and mushrooms are served over fresh spinach; tomatoes gratinee is a flavorful side dish. Cubes of cantaloupe and honeydew are soaked in chilled sweet dessert wine.
1. Chill the wine. Cook the onions, and trim the mushrooms.
2. Make the squash soup and the basil pistou.
3. Puree soup. Brown the chicken.
4. Bake the tomatoes gratinee and the chicken.
5. Top spinach with chicken, onions, and mushrooms; serve.
