Lobster Roll How-To
Begin by cooking the lobster and removing the meat from its shell. To do this, slice the tail down the center of the lobster's underside, and pull out the meat; or break off the entire tail, and run a fork or lobster pick around the inside of the shell.
Slice the tail meat at an angle. After spreading the buns with butter, toast them in a skillet until golden brown. While they're still hot, spread Homemade Mayonnaise on each half of the bun, laying one leaf of crispy lettuce on top.
Place the sliced lobster on the bottom bun, and season with salt, pepper, and lemon juice to taste. Add a slice of fresh beefsteak tomato, and top with the other half of the bun.
