This irresistible confection is inspired by the lemon-meringue pie. Instead of a crust, a cake is cut into layers, spread thickly with lemon curd, and covered with airy meringue. The curd, which adds a buttery, lemony flavor, is easy to make and can be stored in the freezer for up to 1 year. When constructing the cake, it's a good idea to thrust a bamboo skewer straight through middle of the cake; this prevents the layers from slipping or tilting. Spread the meringue around the skewer, and use a pair of kitchen shears to snip off the end.
