Pressed Picnic Sandwich

When preparing a picnic, it's important to pack the basket so that nothing gets crushed. A crowded picnic basket, however, won't cramp the style of this sandwich, which actually tastes better when pressed, as it enables the vinaigrette to permeate each layer of roasted pepper, prosciutto, salami, artichoke, and goat cheese. The substantial chewy crust of the Italian bread will prevent the sandwich from leaking or becoming soggy.

    This is a great sandwich and very adaptable. If you choose to add ingredients like tomatos, add them only right before eating as they will make your bread soggy while pressing (remedy in case this happens: remove the bread, trim off the soggiest portions then bake at a high heat in the oven till bread is perfectly toasted, no one will know!).
