Anglesey Sea Salt

Most of the salt we use is mined from rock-salt deposits. Before we obtain it, the salt is subjected to a process that ultimately strips it of essential nutrients such as magnesium, calcium, zinc, and iodine. But each morning on the Isle of Anglesey in Wales, near the town of Llanfairpwllgwyngyllgogerychwyrndrobwllllantysiliogogogoch (the longest town name in Europe), David Wilson and the staff of Anglesey Sea Salt draw seawater from under the sand with a powerful pump. The salt crystals they obtain are put into piles; rinsed in brine to preserve the taste, texture, and natural nutrients; and then packaged for export.
