- Spread softened butter on the bread instead of adding it to the pan. This keeps the butter from burning.
- For quick melting, use grated cheese or thinly sliced cheese from the deli.
- Cook sandwiches covered, over low heat so the cheese has time to melt before the bread and butter get too brown.
- If cheese hasn't melted by the time the bread is golden, turn off heat, and let stand, covered, until cheese melts.
