Thanksgiving is a traditionalist's holiday. More than on any other day, nostalgic eaters across the country gather around the family table, eager for the meal they know by heart. As such, a cook must tread carefully when experimenting with dinner. Dessert, however, is another story, pies in particular. Part of their fun are the endless possibilities. You can give the classics a subtle spin, or bake several original options and serve guests a little heavenly slice of each.

In reinterpreting favorite flavors, we found that while it's easy to assume one crust fits all, customizing the dough to suit the filling pays delicious dividends.

It's time you dared to try something new. Your family members may notice the difference but they aren't likely to complain. They'll be too busy enjoying every bite.
