Long ago, boughs of pine, spruce, and other evergreens -- forerunners of the Christmas tree -- were hung over doorways to fend off malevolent spirits. For our fanciful pinecones, oval almond cakes are crafted with cookie cutters, covered with chocolate frosting, and topped with "scales," each one a carefully arranged almond slice. The single-serving cakes are accompanied by needles of thin chocolate shavings.
