Dressing in a Jar

Everyday Food, September 2008
Homemade dressing is a salad essential that can also perk up simply cooked vegetables, chicken, and fish, or even serve as a marinade.

To make a batch in a flash, use a jar instead of whisking in a bowl -- just shake to combine about three parts oil to one part (or slightly more) fresh lemon juice or vinegar, along with coarse salt and ground pepper to taste. For extra flavor, add minced fresh herbs (washed and dried), mustard, or honey.

Refrigerate dressing in the jar for up to 2 weeks.
