One reason why fruits and vegetables are such a valuable dietary component is that many are rich in antioxidants such as Vitamins A, C, and E. Antioxidants are believed to have cancer-preventative properties, as well as the ability to help combat heart disease and slow the aging process. Some antioxidant-rich foods are blueberries, prunes, raisins, kale, tofu, papayas, oranges, and carrots.
