Eating Light: Casseroles and Gratins

Martha Stewart Living, September 2002

One-dish meals such as gratins and casseroles are synonymous with comfort food, but because they often contain large amounts of butter, cream, and cheese they are an occasional indulgence at best. By reducing the amount of these ingredients and using traditional slow-cooking methods and lots of fresh herbs and vegetables, we turned five of our favorite dishes into healthful ones that can be savored anytime.

Individual Chicken Potpies with Mushrooms and Peas
Layered Eggplant and Polenta Casserole
Potato, Zucchini, and Tomato Gratin
Chicken Cassoulet with Crisp Breadcrumb Topping
Sole Rolls with Spinach and Lemon Slices
