Mixed Vegetable Salad

You can serve this healthy salad as an appetizer, side dish, or as simple snack.

  • Yield: Serves 4

  • 4 ribs celery
  • 4 carrots, peeled
  • 4 radishes, cleaned and trimmed
  • Vinaigrette, as needed


  1. Thinly slice vegetables crosswise using a mandoline. Place in a large bowl and toss with vinaigrette. Serve at room temperature.
