Sprinkles' Strawberry Cupcakes


This recipe for delicious strawberry cupcakes is from Candace Nelson of Sprinkles Cupcakes.

  • 2/3 cup whole fresh or frozen strawberries, thawed
  • 1 1/2 cups all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/4 teaspoon coarse salt
  • 1/4 cup whole milk, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 cup sugar
  • 1 large egg, room temperature
  • 2 large egg whites, room temperature
  • Sprinkles' Strawberry Frosting


  1. Preheat oven to 350 degrees. Line a 12-cup muffin tin with cupcake liners; set aside.

  2. Place strawberries in a small food processor; process until pureed. You should have about 1/3 cup of puree, add a few more strawberries if necessary or save any extra puree for frosting; set aside.

  3. In a medium bowl, whisk together flour, baking powder, and salt; set aside. In a small bowl, mix together milk, vanilla, and strawberry puree; set aside.

  4. In the bowl of an electric mixer fitted with the paddle attachment, cream butter on medium-high speed, until light and fluffy. Gradually add sugar and continue to beat until well combined and fluffy. Reduce the mixer speed to medium and slowly add egg and egg whites until just blended.

  5. With the mixer on low, slowly add half the flour mixture; mix until just blended. Add the milk mixture; mix until just blended. Slowly add remaining flour mixture, scraping down sides of the bowl with a spatula, as necessary, until just blended.

  6. Divide batter evenly among prepared muffin cups. Transfer muffin tin to oven and bake until tops are just dry to the touch, 22 to 25 minutes. Transfer muffin tin to a wire rack and let cupcakes cool completely in tin before icing.

    Well let me start by saying that this is one of my favorite cupcakes at Sprinkles. This recipe tastes exactly like theirs. I'm not sure why some of the negative comments but in my opinion it's great !!!!! I usually don't make any comments but I thought this one deserve it. I only did three things differently, I doubled the baking powder, just to make sure they rise, I doubled the strawberries, based on other comments that it did not have a strawberry flavor and made my own buttercream icing and added the strawberry purée and came across that it was to runny but it was a easy fix just added more confectioners sugar until the consistency was a bit more thicker. The end result was exactly the same Sprinkle's strawberry cupcake.. I was very impressed. I will be making this again and again. And a lot cheaper than going and getting one cupcake for 5 dollars .....

    I love sprinkles cupcakes and decided to make the recipe for a birthday. First the cupcakes did not taste like the sprinkles cupcakes i normally buy, the cupcake was dense and was lacking strawberry flavor. If you want to make strawberry cupcakes i suggest trying a different recipe. It's not possible this recipe is the exact recipe from sprinkles.

    I loved this recipe, as did everyone at my party. I doubled the recipe and made it in a half sheet pan. I made them into mini cakes by cutting small circles and stacking two with frosting in between and on top. The cake was super moist and had a nice, subtle strawberry flavor. For the frosting, I actually added an extra stick of butter and it was very smooth with great strawberry flavor. I love how the cake and frosting had a subtle pink hue. I got rave reviews and will definitely make it again!

    The sprinkle's strawberry cupcakes didn't have much of a strawberry taste in them.Also Sprinkles cupcakes are heavy.Cupcakes should be light.

    ZERO strawberry flavor comes through with these. They taste like a plain Jane vanilla cupcake. Disappointed.

    These may be the best cupcakes I have ever made! I doubled the recipe but otherwise followed the directions exactly. (The video has some good tips, too.) The frosting is especially delicious, and the recipe makes a lot- plenty to top all the cupcakes. I will definitely make these again!

    A lot of the reviews said this cupcake was terrible. I however found them quiet tasty. If I made these again I would add another tsp. of PP because they didn't rise as much as they said they would. I would also add a couple more Tbs. of puree. All in all a great treat tho.

    Dont waste your time! Horrible - I'm a professional baker threw out and will still look for a better recipe...
