Carrot Cake with Lime Mascarpone Icing

This delicious recipe is courtesy of Jamie Oliver and can be found in his cookbook, "Cook with Jamie."

  • Yield: Serves 8 to 10
Carrot Cake with Lime Mascarpone Icing

  • 1 1/4 cups unsalted butter, room temperature, plus more for pan
  • 2 cups light-brown sugar
  • 5 large eggs, separated
  • Zest and juice of 1 orange
  • 1 slightly heaped teaspoon baking powder
  • 1 heaped teaspoon ground cinnamon
  • Pinch of ground cloves
  • Pinch of ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup ground almonds
  • 4 ounces shelled walnuts, chopped, plus more for garnish
  • 1 1/2 cups self-rising flour, sifted
  • 10 ounces carrots, peeled and coarsely grated
  • Sea salt
  • 4 ounces mascarpone cheese
  • 8 ounces cream cheese, room temperature
  • 1 scant cup confectioners' sugar, sifted
  • Zest and juice of two limes


  1. Preheat oven to 350 degrees. Butter a 9-by-2-inch square baking pan and line with parchment paper. Set aside.

  2. In the bowl of a food processor, pulse together butter and brown sugar until pale and fluffy. Add egg yolks, one at a time, pulsing after each addition. Add orange zest and juice; pulse to combine. Add baking powder; pulse to combine. Add cinnamon, cloves, nutmeg, and ginger; pulse until mixture is well combined.

  3. In a large bowl whisk egg whites with a pinch of salt until stiff. Gently fold in almonds, walnuts, flour, and carrots; fold cake mixture into egg white mixture. Pour batter into prepared pan and bake until golden and a toothpick inserted into the center comes out clean, about 1 hour. Let cake cool in the pan 10 minutes before turning out onto a wire rack to cool completely.

  4. In a medium bowl, mix together mascarpone, cream cheese, confectioners' sugar, and lime zest and juice. Spread mixture over top of cooled cake and sprinkle with chopped walnuts.

    I made this cake and icing and it turned out as good as it looked when Jamie made it on "The Martha Stewart Show" The cake was very moist and flavorful and the icing was very creamy and light. I will be making this cake over and over for years to come.

    This cake turned out excellent. I made it for my mother's birthday, it's her favorite, and it turned out to be a hit with everyone. I did two things different though. I used self-rising cake flour instead of self-rising flour, which might have made the cake a little lighter. And I used dark brown sugar instead of light brown sugar. I followed the directions exactly when I made the icing and it turned out great as well. Not runny and not too limey.

    This cake did not live up to my expectations. It was dry and flavorless. The icing was the only good part.
    I guess if you look like Jamie Oliver no one is really paying attention to the cake.

    I really liked this cake, I also found that it was not necessary to use the juice of 2 limes in the icing, as this makes the icing too watery. I did not have the ground almonds and used cream cheese instead of mascarpone, but it turned out well.

    While there were rave reviews at dinner today this recipe left lots of much juice is in the orange, how much zest, how much lime juice in the icing (the icing was runny), and why weigh the carrotsn n n n n n why not give the cup equivalent. The batter was more than a 9 x9 inch pan.

    Guys, really... this cake was like a brick and the lime icing was just too over powering. Plus, the methodology behind it was way to complicated for a simple carrot cake. As a high end gourmet chef, I really have to say...this recipe is a major disappointment.

    The recipe calls for a "9-by-2-inch square baking pan". Obviously a typo, but please clarify. Should that read "a 9-by-12-inch (rectangle) baking pan" or "a 9-by-9-by-2-inch square baking pan"? I watched the video and I believe Jamie mentioned an 8-inch square pan. Which is correct?

    Mascarpone cheese is a very smooth rich cheese. It is one of the priciest on the market, but can be made at home. All you need is Sour Salt and a quart of heavy cream. I'm sure Martha has a recipe for how to make it at home.

    Mascarpone cheese can be found in most common grocery stores these days and doesn't require going to a specialty store as it may have in years past. My local Harris Teeter carries it, as does Kroger. Usually, it's found near the deli section where you would find the other special cheeses and creme fraiche. Always in a refrigerated section. Sometimes, it can be found, depending on your store, along side the regular cream cheese and ricotta, but more often than not the former.

    Mascarpone would be found in the cheese section; maybe even 'specialty cheeses' depending on your grocery store.

    I just made Jamie's Carrot Cake - Fantastic. I would suggest zesting both limes but only juicing one lime - adding the juice to taste. I think the juice of two limes would make the icing too runny. Anyway add the juice to desired consistency.
    Mascarpone Cheese is ltalian cream cheese - Whole Foods, Trader Joes it comes in a tub.
