Meatloaf and Buttermilk Mashed Potatoes

Our comforting menu of meatloaf and buttermilk mashed potatoes is as hearty as the diner original -- but better for you. Panko is sold in many international aisles; regular breadcrumbs can be swapped in, too.

Meatloaf and Buttermilk Mashed Potatoes

  • 2 small carrots, chopped
  • 2 celery stalks, chopped
  • 1/4 medium onion
  • 1/4 cup panko (Japanese breadcrumbs)
  • 1 large egg white
  • 3/4 pound ground beef sirloin
  • Coarse salt and ground pepper
  • 1/4 cup homemade or store-bought barbecue sauce
  • 1 pound baking potatoes, peeled and sliced 1/2 inch thick
  • 3/4 cup low-fat buttermilk
  • 1 pound green beans, stem ends removed
  • 1 teaspoon olive oil


  1. Preheat oven to 450 degrees. In a food processor, chop carrots, celery, onion, and panko with egg white until smooth, about 1 minute. Transfer to a large bowl; mix in beef, 1 teaspoon salt, and 1/8 teaspoon pepper.

  2. On a foil-lined baking sheet, form meat mixture into a 6-inch-long loaf; brush with half the barbecue sauce. Bake until an instant-read thermometer inserted in loaf registers 160 degrees, 25 to 30 minutes, brushing halfway through with remaining sauce.

  3. Meanwhile, in a medium saucepan, cover potatoes with cold salted water by 1 inch. Bring to a boil; reduce to a simmer, and cook until potatoes are easily pierced with a knife, 15 to 20 minutes. Drain; return to pan. Stir over medium until a starchy film forms on bottom of pan, about 1 minute. Remove from heat; mash with buttermilk until smooth. Season with salt and pepper.

  4. While potatoes cook, set a steamer basket in a saucepan filled with one inch water; bring to a gentle boil. Add green beans; cover, and cook until crisp-tender, 4 to 6 minutes. Transfer to a bowl; add oil, season with salt and pepper, and toss. Serve meatloaf with mashed potatoes and green beans.

    I agree with"MainC".The meat was flat in flavor. Without a food processor it was, it was overly watery from veggies. I ended using BBQ sauce to bring flavor to the meat.The mash was just bitter.We added another 4-5 pounds of potatoes just to get flavor & consistency right. Overall, it took far too long & definitely NOT a hit. I don't have the ideal MS, superfunctional kitchen. So the recipe is not for average folks like us.Martha's "Mash Potatoes & Meat Loaf" is what I'll go back to.This 1 a NO!

    I made this for dinner and it was a hit at my house. The buttermilk mashed potatoes were smooth and delicious. The meatloaf was wonderful. I do not have a food processor so I used my blender. I would recommend a food processor, much easier. The added veggies made the meatloaf moist.

    I did not have good results with this recipe. I don't have a food processor so tried to chop the vegetables as small as possible but it didn't work, the texture was not correct. I realize a food processor would have made a big difference. But apart from that, I also found it lacked flavour, as there are no seasonings other than salt andpepper. I appreciate that it was a healthier version, but think I will go back to my tried and true recipe next time.

    I've enjoyed this recipe many times since I first saw it in EDF. My husband doesn't like meatloaf, but this, he adores. The veggies prevent it from being a brick of beef. I skip the barbeque sauce and opt for a ketchup, brown sugar, Worcestershire sauce mix. I also like the recipe because it includes the entire meal, potatoes, green beans, and meatloaf. It makes it easy to get a complete, healthy meal on the table.

    My husband liked this and he doesn't usually like meatloaf. I made it with ground turkey, as my usual. Also, I didn't read the directions too well! Didn't process the veggies with the panko and egg white. Just mixed the chopped vegetables in with the meat and other ingredients. Still good!

    This was so moist and delicious. Even my picky non-meat eater teen daughter loved it. I made enough to have it again the next day. I pureed the carrots, celery and onion and couldn't even taste it in the recipe so no need to even tell the kids! Delicious.

    This meatloaf recipe is the BEST! I've never tasted a better meatloaf!!
    Instead of chopping the carrots, I like to shred them. Also, since I like vegetables, I add an extra carrot and celery stalk to the mixture.
